A while back, I posted a carrot cake with rye flour for a friend’s birthday, which was delicious! But someone else got a bit jealous and also demanded a cake… well… What could I do?? I didn’t really know which cake to make, so I had the initial idea of baking a black forest cake. Well, that didn’t work for the lack of cherries in syrup. So I decided to make Ly’s cake, a black forest cake with a twist of almonds, mulberry and strawberry sauce… you should try to make it!!
Recipe for Ly’s Cake:
Cake:
- 400g of unsalted butter;
- 400g of caster sugar;
- 280g of plain wholemeal flour;
- 120g of cocoa powder;
- 7 eggs;
- 1 tablespoon of baking powder.
Sauce:
- 350g of mulberries;
- 150g of strawberries;
- 1/4 mug of sugar;
- 1/2 orange, squeezed;
- 1 mug of water;
- 3 tablespoons of corn flour.
Icing:
- 200g of double cream;
- 200g of 70% dark chocolate
Filling (together with the sauce):
- 400g of double cream, whipped.
